This may be a weird question, but I'm interested in documenting the source without persisting xml comments in the source itself. We've taken to a clean, "no comments" self-descriptive coding style and I want to be able to maintain a source-bound documentation set that does not inject or require xml comments on the source side.
Is this doable with DocumentX?

Absolutely - in addition to the comment editor integrated with Visual Studio, Document! X provides a complete authoring environment in which you can create your additional content outside of source comments (or combine the 2 approaches).
If you create a new Project in Document! X for your assembly you will find a Content File has been created by default - open this for edit and you can author your content in there.
You don't actually need to define any content at all - the core reference information is automatically generated, but you can use Content Files to provide descriptions, examples, links to other topics or members etc.
