Comparing to Doc X 2008, in the version 2010 two new topics appear in a book describing an assembly: the Introduction and the Getting Started topics.
I don't want these topics in the Doc X output, but I cannot find how to remove or hide them in the output. Anybody know this?

These topics were there in 2008 too. You can remove them by creating a custom template and removing those Page Types and editing the Table of Contents to remove the related nodes.
